Si produce attraverso l'infusione prolungata in soluzione idroalcolica a freddo oppure la distillazione d'infuso di steli fiorali di genepì nero (Artemisia spicata) e/o genepì bianco (Artemisia umbelliformis), con l'aggiunta di sciroppo di zucchero. La gradazione varia dai 30° ai 42°.
Come fare il liquore di assenzio?
La distillazione di assenzio prevede anzitutto una macerazione di erbe in alcool solitamente a 85% per un lasso di tempo variabile, generalmente un giorno. Alla macerazione segue una distillazione del macerato con taglio di teste e code, in modo da lasciare nel prodotto finito solo il cuore.
